Our fresh pasta
Our fresh pasta is made on site, in the open kitchen facing the dining room.
From filled ravioli to tagliatelle, every recipe pairs handwork with slow-cooked sauces, for Italian cooking at fair prices. A yellow sheet of pasta goes through the roller, then becomes tagliatelle or closes over a filling: confit lamb, squash and chestnut, burrata and king prawns.

Petra flour, La Fiammante tomatoes.

Amale’s cooking
At Impronta, Italian cooking stays at the heart of the plate. Some of Amale’s creations also draw on Mediterranean flavours: zaalouk-style aubergine, preserved lemon, gentle spices, homemade amlou. A personal touch, found in specific recipes.
Burrata from Apulia on a Moroccan-style zaalouk of fire-roasted aubergine.
Slow-confited lamb, rich meat jus, Moroccan-style candied dried apricot.
Tiramisù with the sweetness of amlou, a Moroccan almond and argan oil praline Amale makes in-house.
